Creamy Clam Chowder

1 small sweet onion, chopped
3 celery ribs, chopped
1/2 cup butter  (1 stick)
2 cans cream of potato soup, undiluted
3 cans (6 ox each) minced clams
3 tbsp cornstarch
1 qt half n half cream

Large soup pan, melt butter.  Add diced onions and celery. Saute till tender. (medium heat)
 Add salt and pepper taste.
Stir in potato soup, 2 cans UNDRAINED minced clams, 1 can of drained minced clams. Stir well.

Combine cornstarch in small bowl with a little half n half mix well.   Add main half n half to soup slowly, stirring constantly.  Add cornstarch and cream mix to soup.  Bring just to a boil, reduce heat to medium/low heat till desired thickness.

*added company, just add a bit more milk to soup stir till thickens*

Serve with piping fresh french bread
